Garlic Sauteed Spinach

This 5-star spinach side dish is easy to make and so delicious, even the kids will enjoy it. Plus it’s a healthy option you’ll feel good about serving!

Ingredients:

1½ lbs. baby spinach leaves

2 Tbsp. olive oil

2 Tbsp. chopped garlic (6 cloves)

2 tsp. kosher salt

¾ tsp. freshly ground black pepper

1 Tbsp. unsalted butter

Lemon

Sea or kosher salt, optional

Directions:

  • Rinse spinach well in cold water. Spin in salad spinner to dry, leaving a small amount of water clinging to leaves.
  • In a large pot or Dutch oven, heat olive oil and sauté garlic over medium heat about one minute (do not brown). Add spinach, salt, and pepper to pot, toss with garlic and oil, cover and cook for two minutes. Uncover pot, turn heat to high, and cook another minute, stirring with wooden spoon, until spinach is wilted. Using a slotted spoon, transfer spinach into a serving bowl and top with butter, a squeeze of lemon, and a sprinkling of sea or kosher salt. Serve hot.
