1 c. Medjool dates, pitted (about 10)
1 c. pecans
½ c. hemp seeds, plus more for coating
½ c. unsweetened coconut flakes
1 lemon, zested and juiced
1 Tbsp. freshly grated ginger
1 tsp. vanilla extract
Pinch of salt
- Place pecans in a food processor and pulse until finely chopped.
- Add remaining ingredients and pulse until crumbly and starting to stick together.
- Using a mini-ice cream scooper, scoop mixture to form balls. Roll balls in extra hemp seeds to coat.
- Store in an airtight container in the fridge for up to a week or in the freezer for three months.
