Key Lime Sugar Cookies

Who says sugar cookies are only for Christmas? Tangy-yet-sweet fresh key lime juice and zest give a summertime twist to the holiday favorite with a citrusy cookie and glaze that’s light and refreshing as well as sweet and decadent thanks to white chocolate.

Ingredients:

For the cookies:

1½ c. all-purpose flour

½ tsp. baking soda

½ tsp. salt

½ c. unsalted butter (room temperature)

¼ c. granulated sugar

¼ c. light brown sugar

1 large egg

½ tsp. vanilla extract

1 tsp. key lime zest

3 Tbsp. lime juice

¾ c. white chocolate chips

For the lime glaze:

¾ c. powdered sugar

3 Tbsp. lime juice

Grated lime zest (for garnish)

Directions:

  • Preheat oven to 375° Lightly spray a baking sheet with non-stock cooking spray.
  • In a small bowl, add flour, baking soda and salt and mix until combined.
  • In a medium bowl, add butter and sugar and mix until smooth and creamy. Add egg, vanilla, lime juice and zest; mix until combined.
  • Slowly add dry ingredients to wet ingredients; mix until well combined. Fold in white chocolate chips.
  • Drop dough by tablespoonsful onto work surface; roll and flatten slightly (cookies will rise slight but not spread out). Remove cookies to baking sheet about 2 inches apart and bake 8-9 minutes until done (do not overbake). Allow to cook slightly, then remove to a wire rack to cool completely.
  • Mix together powdered sugar and lime juice. Drizzle a teaspoon of glaze on each cookie. Sprinkle cookies with zest and allow to set. When glaze has hardened, serve and enjoy!
