1 c. water
1 c. sugar
1 c. fresh lime juice
1 tsp. lime zest
- In a medium saucepan over medium heat, bring water, sugar and lime juice to a simmer, taking care not to overcook. Cover pan and lower heat slightly. Simmer three minutes or until sugar is dissolved.
- Remove mixture from heat and allow to cool to room temperature. Stir in zest, then chill at least two hours. Freeze in an ice cream maker according to the manufacturer’s instructions.
